Excellent lesson. I love freshly grated parm on seafood pasta. Even my 87 year old mother (born and raised in Naples) has decided that it is great! Why so many rules?

yes I agree, but sometimes we use pecorino cheese on mussels gratin with breadcrumbs.

I think the white sauce is melted cheese...
Any Italian will tell you that you should NEVER put parmesan cheese on seafood.
