i'm in the usa. chinese take out is of course not real chinese food. There is a real difference that i've noticed in fried rice between a nicer sit-down chinese restaurant and a japanese hibachi restaurant i like to go to.
it just occured to me u could be from a caucasianised nation.. if u were referring to panda express or such americanised chinese stalls' fried rice dishes as 'chinese fried rice'..
it's a dish with a million different methods of cooking. there's no difference between chinese or japanese fried rice, it's the chef that matters, the ability to throw out flavour and caramelisation without excessive use of oil.
get it ordered in a top notch chinese restaurant and u'll see what i mean. not everyone cooks like the chefs in common roadside stalls, abusing oil like so. and i believe japanese roadside stalls have the same faults too.
What MOST interesting is that how a 60 min battle and a 30 min OT battle airs for the same amount of time.

Japanese fried rice...YUM! It's so much better than chinese. Light tasting not greasy at all.
