Many Muslim women do not wear hijabs full-time, but they wear it in Mosques for prayer and modesty purposes. So just because she doesn't wear a veil anywhere outside of the Masjid doesn't mean that she's not Muslim.

No, she doesn't have to be Muslim, but they look as if they are standing up to pray, and she's standing with them (wearing what looks like a very modest hijab, in this situation).
So based on that scene, I would say it's likely that she's Muslim.
