So it has been about a month since I started both of these projects, now you can see the results as I taste each lacto-fermented creation!

Why is this important?
There are health implications to eating this sort of food. It is rich in enzymes, and in micro flora that inhabit your digestive system, creating a byproduct of lactic acid, which inhibits the growth of pathogens.

Wait? WHAT?? Yes, I will explain it again, bacteria are competitive. Certain bacteria can only survive in certain environments. When you have circumstances that favor the growth of a specific type of bacteria, you will be sure to attract them. When you attract them, it becomes a self regulating system of bacterial perpetuation. Since these bacteria create lactic acid as part of their life processes, they create an acidic environment that kills other bacteria, or won't allow them to replicate. When you begin to alter your body PH and chemistry by eating crappy food, you change the environment so that the good bacteria start to die. This basically frees up space for other pathogens to gain a foothold. Once that cycle begins, they eventually can gain the upper hand, perpetuating a pathogenic environment, which isn't limited to just microbes, but also give fungus like Candida a chance to grow.

So essentially, this is like natures antibiotic! You are using bacteria to fight off the bacteria that would otherwise make you sick. Not to mention, you end up digesting the bacteria, they are in a small way a source of food too! This is a living food, it is raw, the vegetables are still raw, you don't want to pasteurize or heat it cause it will kill of the bacteria and denature the enzymes.

Other reasons for lactofermenting, include extending your harvest, being able to preserve foods for long term consumption, having an option that doesn't include refrigeration or electricity. It is fun to experiment, if you have kids, this is a great science project for them!!

  • I Love Kraut my wife is going to make some soon,I had to laugh thinking that was a couple hunks of butter on the plate for digestion...lol

  • Good point about taking awhile to get the hang of it. I used to make yogurt for business purposes. It took me awhile to get the hang of it because so many subtle changes could influence the outcome but now I am a pro. =))

  • Really enjoy your videos.  We should all be experimenting with alternative living because the system as is doesn't work and just exploits everything. It's just a business not designed to meet the needs of the people or environment but only take advantage of them.

  • that's awesome! I love sauerkraut but I hadn't ever thought about how it can be made. That's fascinating. I'll need to get going on some of my own projects now. This is a new kind of fermentation for me but I have a passion for this sort of thing myself.
