Ingredients:
2 small onions, chopped
4 cloves garlic, minced
1 1/2 tablespoon of ginger, grated
2 jalapeno peppers, seeded and minced
4 tablespoons of raw cashews, ground
2 large potatoes, diced
2 cups peas
2 cups string beans
2 cups baby spinach
2 cups diced carrots
1 green bell pepper, chopped
1 red bell pepper, chopped
1 can of tomato sauce or 1 can of diced tomatoes
2 tablespoons of clarified butter (ghee)
3 tablespoons of curry powder
1 tablespoon of ground red pepper
1 tablespoon of ground cinnamon
1/2 can of coconut milk
Salt to taste
