Grilled Flat Iron Steak with Corn and Tomato Salad




One 1 ½ HT Angus Reserve Flat Iron Steak

2T HT Traders Olive Oil

1T Chef Paul Prudhomme Blackened Steak magic seasoning

2T Minced Garlic

1 Cup Ruffino Chianti

1T Brown Sugar

2T Tomato Paste




Heat a Grill Pan over medium high heat for 2 minutes. While pan heats, season the Flat Iron steak with the Chef Paul Blackened Seasoning on both sides. Add the Olive Oil to the pan, swirl around to coat the pan evenly, making sure to get in between the grates of the pan. Grill the Steak on each side for 5 minutes for rare or longer for you desired degree of doneness. Remove steak to a platter, cover and keep warm. Add the garlic, and quickly sauté for 1 minute to release the fragrance, carefully watching not to burn it. Remove Pan away from the heat and add the Ruffino Chianti and scrape up any browned bits from the pan. Allow wine to reduce for 2 minutes, and pour into a bowl. Add the tomato Paste, and Brown Sugar to the bowl, and stir to combine and make a great sauce. Slice the Flat Iron Steak thinly on the Diagonal, and Pour the Sauce over the rested Steak and serve with the corn and tomato Salad.




Florida Supersweet corn and Florida Tomato Salad

4 Ears of Florida Supersweet Corn, husked and kernels removed from the cobs

¼ cup plus 1T HT Traders extra Virgin Olive Oil- Divided

3 Florida Tomatoes, chopped

½ cup Crumbled Feta cheese

2T Gourmet Garden Squeeze Basil

Heat a skillet over medium high heat for 2 minutes. Add 1 tablespoon of the HT traders Olive oil, and swirl to coat the pan; add the corn kernels and quickly sauté for 2-3 minutes until they reach a deep golden color, and begin to release their fragrance. Remove the corn to a bowl and set aside.

In a large Bowl, whisk the Oil and Vinegar, and the Gourmet Garden Basil to blend. Add the corn, tomatoes, and feta toss to coat evenly. Serve with the grilled Flat Iron Steak.
