Alternative controllers
A keyboard may be perfect for playing chords and normal melodic lines, but you can't e.g. sweep chromatically through notes like you can with a MIDI-fied guitar or an iPad (plus MIDI connectivity accessories). But there's something else that might already be running on your music computer: A virtual keyboard -- part of many sequencer applications (usually to the left of the piano-roll / grid editor) -- can be misused as a simple performance instrument which forces you to play differently.
Homework
Try playing other sounds i.e. not only Birdcage Canyon, recording the results to an external device if necessary. You could even start programming special patches that take advantage of its quirks / limitations. Do you own a MIDI breath controller?
