Actually, it's better if you lightly cook the kimchi and pork (or other meat) separately with some sesame oil for a sharper flavor and lightly cook the pork for softer meat. (Make sure to cook the kimchi first... then cook the pork... in a separate pan with sesame oil.
That pork would be too chewy the way you're making it now.
You should also add some ground garlic, and anchovy powder. I also add a table spoon of sugar to also help bring out the flavor.
