i made it a whole week i'm feeling good and i'm excited to see whats to come :)

Medifast Oatmeal Muffins

In a bowl:
1 pkg Medifast Oatmeal mix
1/4 tsp baking soda
1/8 tsp baking powder
Splenda to taste (optional)
Spices to taste (Dry only)

In a 1 cup measure:
1/3 cup water
1 tsp white vinegar
1 tsp vanilla (or to taste, or other liquid flavor, optional)

Have a mini muffin pan sprayed and ready to go. The oven should be preheated to 350.

You MUST have everything ready to go before you mix the wet and dry as the chemical reaction takes place quickly and we want to trap as many bubbles as possible.
Mix the dry ingredients well, and then mix the wet ones. Pour the wet into the dry and mix up to a smooth batter as quickly as possible. Pour into pan. Bake for 10 minutes.
Turn out of pan immediately.

  • i was jus curious... did you stop medifast after the first week? or jus the vlogs?? i really enjoyed watching them:( i myself am on medifast now although i realize this was a couple of yrs ago:) but today is my 1st week mark! and weigh in day! im excited but i just wanted to see results and whatnot!

  • @shakeezy i did medifast for about a month but decided it wasn't for me. i only vlogged everyday for the first week.

  • MEDIFAST PLATEAU BREAKER.  I have been on medifast for about a month. The first few weeks were great then I hit a plateau that would'nt go away. However, I found an interesting plateau breaker: beer. I did the medifast diet, drank 1 gallon of water, and at night time just before bedtime, I drank 2 lite beers (no more than 2!). It seems that the 2 lite beers not only flushed the excess water out of my system, but the fat too. It broke the plateau.

  • Wait, so if you use 1 package of oatmeal for the muffins, does that mean you get to eat ALL the muffins?? Well, I guess they are just mini muffins. But still, that's got to feel like you're eating a lot of yummie food!
