Dear Hokie Winemakers: I will share with you one of our "secret" winemaking techniques, which I believe only you and true Hokie fans can appreciate. It's using a VA Tech Paddle (earned while attending the VA Tech Sports camp decades and decades ago) to punch down the cap during fermentation. This has produced several award winning wines, I kid you not. Cheers!
