GNOME-Shell is still a heavy in developement release and is more stable than Plasma and GNOME 3.0 comes in Oct/Nov 2010 so they have still a year more =)
GNOME wont make this again, and especially not again after KDE made it
works fine and looks nice =) but i think everybody can see that its not finished yet but GNOME 3.0 comes in one year so they have enough time

for testing (on production machine) will I just install (and remove!) gnome-shell and mutter via synaptic or will it break something? How did you add those text captions into the video?
