I like the idea as well but you could always cover the styrofoam ball with plastic wrap? This way non of the fruit will touch the foam at all!!

@NauticalAcronym I agree I don't like the styrofoam touching the food, but we do use Styrofoam cups. I would like to know if this is the same product.

This is a great tutorial, but there are some valid concerns with using Styrofoam and I think a good substitute would be a rice krispie ball- like what they use in cake making. It's hard to find a video on making rice krispie balls, but if you follow a recipe for rice krispie squares it will work. Instead of packing the rice krispies into a dish just let them cool a bit and form them into a ball by hand. If you are worried about it drying out you can put a layer of fondant on it.

I was thinking I could run to the 'Dollar Store' here in Cedar Rapids,Iowa to hunt down a ceramic vase and a softball sized Styrofoam ball. My new friend 'Kelly Fuller' likes Dark Chocolate so I think doing it with 'Dark Chocolaty' would be really fun~

AS A MOM AND ARTIST I CONSIDER THIS VIDEO HELPFUL, AS A FOOD SERVICE I HAVE A SMALL CONCERN WICH CAN BE EASY ADRESSED, I SUGGEST TO COVER THE STYROFOAM WITH A THIN LAYER OF ICING &/OR FONDANT SO THEREFORE ANY FRUIT WOULDN/T TOUCH ANY "NON FOOD APPROVED SURFACE". ANYWAYS IN THE "MAKING OF" ANY CERTERPIECE LIKE THIS TO STAY IN THE SAFE/DELIVERY ZONE, SOMETIMES WE "INCLUDING" MYSELF USE SOME OF THIS TRICK LIKE GLUE GUNS, BCZ LIKE SOME1 SUGGESTED (SUGAR) RELAYS IN WEATHER CONDITIONS.

I think with all those dry fruits it might be all right to tooth pick them onto the styrofoam ball, not with fresh fruit though. If you remove the rind off a melon or honeydew you can skewer that into flower foam thats inside your ceramic base. The fruit won't touch the foam directly and then you can skewer or toothpick your other fruits.
