its either your software or.....your trying to capture in to high of quality or something. I am not sure what software you are using and how it is set up so I can not say for sure. but I use both pinnacle studio and microsoft movie maker with almost the same settings you had mentioned and without any trouble....all my videos come out good. I would have to know your exact settup from all the video options you have set,to the exact way you have your cables directed for capture...all of it.

try using microsoft movie make first ,if that doesnt work then get yourself pinnacle studio....it works good. if neither of those work then let me know and we will tweak in your settings some more
Id be more then willing to help you out on setting up what needs to be. as I can see just from looking at your settings what needs to be done. but . The least you could do is check out my youtube videos and comment rate and subscribe...and then Ill help you get as good of quality as my videos

My quality is just as good if not better than yours...and the picture is larger and no laggy jumping around to the video either. I can help you set up your settings if you want?...what are you using for capture? and what are your settings and are you using s-video or rca for capture?
