  • You can expect letting this ferment, and clear up, for at least 6 weeks, and it'll likely take longer. I think I let every batch I did go for at least 8 weeks in the carboy.

  • Yes, Apfelwein isn't beer, and it can spend it's whole fermentation in primary (although I have to add that many of my beers spend their whole time in just the primary fermentation as well, and don't go to a secondary at all, just straight into a bottling bucket after up to 4 weeks in primary). This style of cider will take a bit of time to clear up and have all the yeast drop out of suspension. Having used both the Lalvin and Montrechet yeasts, I have to say I prefer the taste of the Montrechet

  • How long did it take before yours started to bubble? I pitched my yeast last night and it's not bubbling yet.

  • General rule for yeast is to give it at least 72 hours before you start worrying about the viability of the yeast you pitched. I haven't made a batch in a few months, but as I recall Apfelwein takes a day or two to get started, and that's just some light activity, then by the end of a week it's really bubbling good! Hope you made sure to leave some room in your fermenter, unless you've got a blow off tube rigged up...

  • @broken14us I always let my EdWort's apfelwein ferment for a month. Then rack and bottle. I have a batch going right now that I added a crushed multi-vitamin to speed up fermentation.

  • i see. well i've never brewed beer or cider. i'm doing a traditional semi-sweet mead right now. idk if you know much about mead, but after a week the gravity had only gone down from 1.1-1.095. is that normal for it to be that slow?

  • Thanks for the info! Mine started up about a day and a half after pitching. I was a little worried there. haha
