Vegan No Bake Cookies Recipe - HeyThatsMike TyBoze

Vegan No Bake Cookie Recipe requested by HeyThatsMike. When I searched for recipes and videos, I saw that our friend Tyboze made these before, so these are also for him!

Vegan No Bake Cookies Recipe

Ingredients:

1 ½ cup white sugar
½ cup almond milk
¼ cup earth balance margarine
1/3 cup cocoa powder
1 tsp vanilla extract
½ cup peanut butter
3 cups quick cooking oats

How to:

In a medium saucepan, combine sugar, almond milk, margarine, and cocoa powder. Bring to a boil and cook for 1 to 2 minutes.

Remove the pan from the heat, and stir in the peanut butter and vanilla extract.

Once well combined, stir in the quick cooking oats.

Line a cookie sheet with wax paper, and place the mixture onto it by the tablespoon. Leave about an inch in between, because they do spread a little.

Refrigerator for at least an hour, or until they have set.

Enjoy, they really taste like Reese's Peanut Butter Cups to me.

  • These cookies should be solid so it may be because of the vegan butter and almond mill no butter fat but hey if they still taste good that's all that counts...lol

  • @Carballoca I have made them several times since then and I think they are turning out more solid now because I am boiling the ingredients longer.

  • I make these cookies *all* the time, especially in the summer because I get cookies without turning on the oven. If the cookies come out soft and sticky it is because you did not cook the oats long enough. I most often use old fashioned oats (not quick cook) and cook the oats in the pot without adding the peanut butter for at least 5 minutes. Then I remove from heat and add the peanut butter last. Hope that helps!

  • these are WAAAAAY too sweet. take it easy on the sugar. about half as much would have been fine.

  • 2 questions-

    1) Can i substitue Applesauce for butter? I cant eat butter, im on a diet:/ but ive known that applesauce is used often as a butter substitute, so do you think/know if this would work?

    2) Do you need to use peanut butter? i dont really like peanut butter =[

  • @WhoCares3001 I cook the oat at a rolling boil for about 5 minutes in the milk and chocolate and sugar then add the peanut butter last. Hope that helps.

  • @TheMoparadise So you cook the oats and let them sit for 5 minutes. Add remaining ingredients, peanut butter being last?
