Quite an ignorant statement. Look through some of Anand's games where his opponent doesn't play for draws out of the opening and you'll realise he's anything but "boring".

Howcome he didn't want to take the bishop with pawn again? He had nothing to lose and all to gain, I don't see how saving pieces could cost you a game.

Well there's only a few moves that are strong enough worth mentioning, so the theory is what should be played in the position. It's a game of theory and logic, just because it's logical and boring, doesn't make it a bad game. It's just a test of your power to analyze position and outcome.
