Mainly because the lighting in the video makes the coffee look lighter than it is in real life. However, we also don't roast most of our coffee super dark (esp. Single Origin coffee as shown in the video). We try to bring out the more subtle and complex flavours inherent to the coffee, and we find that when it's roasted too dark you lose those flavours and it all becomes obscured by a generic smoky/carbony flavour. Not that that's necessarily "bad"; it's just not our style.

No, because most presses are made from borosilicate glass, which is very resistant to temperature shock. If for some reason the press is made of soda-lime glass, there is more risk of breaking it with a quick change in temperature, so you'd want to heat it up. But that's quite the hassle for making coffee, hence why borosilicate is more typical.

Hi, Great video. Several questions:
1) some videos show that after three minutes, instead of plunging, first remove with a spoon the bloom and some of the grinds on the top. Is this going to make any necessary effect for the better on the result?
2) a video on this subject showed a Bodum brand velcro wrap to wrap around the pot while waiting out the 2 mins. Would you think this is something that will benefit the brew?
3) 1 scoop coffee per 4oz water rule is usually the trend. You use less. why?
