Salmon baked the Moroccan way
Ingredients:
1 kg salmon
4 to 6 Tomatoes (2 sliced + 2 grated)
2 Green peppers
1 Tsp black pepper
1/2 Tsp white pepper
1 Tbsp cumin
1-1/2 Tbsp paprika
1 Tsp salt
1 Tbsp parsley
1 Tbsp coriander
Half a lemon's juice
6 to 8 cloves of garlic
1/2 cup olive oil
2 Tbsp water
A handful or a couple green olives
(Moroccan ones preferably)

Method:
- Set the oven to 350 F.
- Make the charmoula by mixing the dry ingredients first, olive oil, lemon juice, garlic, & grated tomatoes, parsley & coriander.
- Spray an oven pan with olive oil
- Put the sliced tomatoes after soaking them in the charmoula
- Do the same with the salmon & green pepper
- Add the rest of the charmoula on the top of the salmon.
- Add 2 Tbsp of water in the corners of the pan.
- Bake it covered with foil, for 30 to 40 min.
- In the last 15 min remove the foil, add the green olives & put it back & let the sauce thicken up a bit.
