Quick question please; can you put a helmet in the storage part of this bag AND ride with it in there or does the helmet sit too low? Obviously on the cruiser shown in this video the back rest would be a problem, but on a sport tourer or similar with a much flatter seat could you sit down on the bike with the helmet in storage?

It might be possable but I wouldn't try it. I don't think the bag was designed for this purpose plus it might cause a problem at high speeds. However, I'm not really an expert.
