They fascinate and thrill me, but when I think about cooking them myself, I get scared. I am determined to conquer my culinary fears, and cook the dishes that terrify me most.

Um you overcooked the squid thats why it is rubbery. Seafood cooks fast. Also that thin layer of skin on the outside i do believe you can eat that.
