【材料】中筋麵粉1斤、蔥半把
【調味料】豬油 3大匙、鹽半小匙
【做法】
1、先做好燙麵,也就是以3杯中筋麵粉加1杯熱開水和開,再倒入半杯冷水,調合成糰,放入抹了油的塑膠袋中,醒30分鐘,就成了燙麵。(一杯約為220cc)

2、蔥切成末,灑上一點鹽,備用。

3、將醒好的麵糰,擀成一大片,上面鋪上豬油、鹽、蔥末,捲成長條,以虎口捏緊,扭下,分成小塊,直立壓扁入鍋煎透之後,再將蔥油餅旋轉擠壓一下即可。
* *麵食分為五大類

a. 燙麵,使用於蔥油餅、餅皮

b. 發麵,使用於包子、饅頭

c. 冷水麵,使用於水餃、麵條

d. 油酥,使用於燒餅油條
e. 麵糊,使用於蛋糕

* 醒=休息=讓麵粉的筋段掉 發=放入酵母,一樣要醒麵

* 燙麵:3杯麵粉加1杯熱開水,再加半杯冷水,調合成糰,醒30分鐘。




蔥油餅旋轉擠壓:你拿擀麵棍固定蔥油餅的重心(按住中心點),然後另一隻手拿筷子或鏟子等工具,抵住邊緣,向內擠壓,蔥油餅就會蓬鬆囉!


您可以將麵團(生的),分別放入塑膠袋的的四個角,然後對折疊放,放入冰箱冷藏或冷凍,需要用時,再拿出來壓扁灑上蔥花
