Sorry that I lost focus a few times, I was trying to keep the torch from burning my house down.
Sous vide egg 1 hour at 64.5 C, cool in water 10 mins, remove shell + white, roll yolk in flour. Whisk another egg and add 1 tsp vanilla. Roll floury yolk in egg. Spread sugar on a plate. Roll eggy egg in sugar. Freeze 1 hour. Torch to melt sugar.
I left it for a minute or two before flipping to torch the bottom. Be very careful about that, egg #2 failed when I tried to flip it (bottom stuck to the foil).
