I think that it needs a bit more cooking but it start to be more hard to chew it .this type of cooking it's really good if you know that your duck it's really fresh and good ......if you get it frozen and you ll cook it medium well ,or well done its not eatable.i like this video ,good job chef

this duck is still raw!!!! LOL! do it like he said, then put in in the oven for 35-45min on 80°C. or 10 min at 180°C if you aint got much time...

@HKSI777, I'll try to help you out a little since you obviously know nothing about food. Being a RED meat, duck only has be cook to an internal temperature of 145F to kill food born bacteria, as apposed to chicken, turkey, and other WHITE meats that have to be cooked to 165F. While I agree that the chef did rush trough it to keep the video short, duck breast is ideally served mid-rare with and a rich red color. Every food critic in the world agrees with me.
