The French use a vegetable combination of Carrots-celery-onions. Louisiana cooking uses the trinity of Onions-celery-bell pepper.
Why not combine the 2 and use Carrots-onions-peppers-celery and then on occasion add the Pope(garlic) and or fresh hot peppers like jalapeno?
