@johnlakeland - Only if you want to build a pierce oscillator, which is a lot more work, and very very hard to tune without the right equipment - the 4 pins osc's can be found on eBay mate :) Cheers!

@TheFinallBoss - You'll find them on ebay mate, just search for 3.579545mhz and they'll show up - make sure to get the 4 Pin version :)

What would happen if a different value oscillator crystal was used such as 3.6864? Is "close enough" good enough or would it just mess up the signal?

@DragonsTrap - Hey man, the frequency is whats used to carry the colour signal, and your TV is expecting only certain ones.. So if you use a different value, even if its just a bit off, your going to get a Black and White picture sorry.. Cheers mate :)
