Rudolph's Muddy Hoofprints

Here's a recipe for one of our Christmas cookies that we're baking this year.

Ingredients:
one quarter cup of egg beaters or one egg
1 cup of butter, softened
one & one third cup of sugar
4 tablespoons of milk
2 teaspoons of vanilla
2 cups of flour
two thirds cup of unsweetened cocoa powder
one half teaspoon of salt
1 14 oz package of caramels, unwrapped
3 tablespoons of whipping cream

Beat together egg, butter, sugar, milk & vanilla
In separate bowl mix flour, cocoa & salt
Combine flour mixture with butter mixture
Chill for at least one hour
Preheat oven to 350
Place one inch balls on cookie sheet with a pecan pressed into each one
Bake for approximately ten minutes
Let cool on rack
Heat Caramels & milk in microwave for 4 mins on half power
Heat chocolate chunks in microwave on half power for 2-3 mins
Decorate cookies with hot caramel & chocolate and add additional nuts if desired
Enjoy!

  • They were really good - they'd probably be great with almonds or peanuts or even pistatios. In fact we would probably use salted nuts next time - they salty sweet thing is awesome!
