Veggies and Fruits Skewer is a very fun dish for all ages (including kids), but you have to do the cutting for them first of course.
Here I have eggplant, pineapple, cherry tomatoes, king oyster mushroom, leek, onion and pre-fried tofu.
1. Preparation for the vegetarian chicken
soak them in hot water for 30 mins, then squeeze them dry, then soak again in coconut water to retain coconut sweetness in them, then drained but don't squeeze out the coconut water, so that the sweetness will stay in the meat.
To marinate the vegetarian chicken, tofu, and king oyster mushrooms, my partner, Nguyen Chan, mixed 1 teaspoon of garlic powder, 2 tablespoons of honey, 3 tablespoon of soy sauce, 1 tablespoon of vegetarian oyster sauce (mushroom sauce) and a lot of sesame seeds (you can also use the chia seed to replace the sesame seeds, same nutty flavor).

Use a wooden skewer and skew in whichever veggies you preferred. Then use the left over marinated sauce to put on the vegetables while grilling.
Remember to flip them to avoid burning, with medium heat.
This dish can be made in less than 20 mins. Most of the time will be spent on cutting and skewing.
