International contest The Bocuse d'Or is probably the greatest chefs competition in the world, which means it's vitally important that the right person fronts the British team.

BigHospitality was one of a handful of publications to be given access to the cook-off between shortlisted candidates Adam Bennett of Simpsons and Martin Hollis of Gleneagles at the University of West London in Ealing.
