This is a wonderful recipe for zucchini bread made from the pulp leftover from juicing. Everyone that tastes this bread loves loves it!!!!!!!!!!!!!!!!!

  • She is honest as she informs her recipe is not the healthiest. Ditch the sugar and substitute the eggs - substitute the all purpose flour - stevia powder instead of sugar.

  • Looks like a great recipe! Some ideas I have to make this a bit healthier would be to substitute the all-purpose flour for ground whole oat flour or fine ground wheat pastry flour. Substitute the sugar for blue agave syrup or stevia powder. Substitute vegetable oil for virgin coconut oil or applesauce.
