the kinect takes point cloud data. point cloud data has a definite distance from the camera and can actively monitor movement and position of entities. Think real life raytracing. So with that said it is relatively easy to convert that point cloud data to be used (with a projector) to broadcast a color or animation onto a substance based on a distance from said kinect.

Or, there may be a camera observing how the distance of the sand surface changes from it. Which would actually be simpler to do. And it actually exists. In this particular video.

so the kinect camera analyzes ho far away the sand is from the projector and adjusts colors to make the sand appear as sand, water, or lava? i.e.. the lava would be the closest and water the furthest! =D

P.S. i only know this because for FIRST robotics this year we had the option to control robots with kinect cameras.
