So at the beginning of your shot you're at about 202F (which I thought was ideal). At the end of your shot, you're at about 189 F. Of course, that's a wide spread, but where are the issues with this shot? Seems pretty good to me. Your temp surf vid shows you starting your shot at 217F, which seems too hot to me.
Also, can you explain the two pitchers? Thanks!

@dmleventhal The temperature readout is from the top of the boiler. Brew water temperature at the group head will generally be less than this. The PID manufacturers factor in an offset of around 10C (the default setpoint is about 105C), so if you want a brew temp of 95C, aim for a temperature at the top of the boiler of 105C.
