Marching makes it easier to keep the tune in time, the music sounds so much better when the embellishments start in the correct spot and in time. It's better to me than hearing a foot thumping hard against the floor.

It's not "customary" to march, it's mandatory for competition marches.

Helps with tempo (although I doubt Open Graders need any help with that), and it allows the room to hear your instrument from all perspectives. And, let's face it, watching a bagpiper isn't the most exciting thing to see.
