  • Come on man!! Cast iron wasn't mean't to be kicked around. Just use the stuff and take care of it. The mystery is part of the magic. By the way,  kosher salt is the cleaning magic.

    The same would have to be done with a new one too. The pan needs several layers of the seasoning to function at it's best.

  • Hi Daniel, I seasoned my pan according to your video. It turned out great. Then one day, I left it heating up on high with nothing in it except butter and it started smoking. While it was dry and hot, I tried using a hard edge to scrape off the burned butter. I notice now that I scraped off the seasoning and the surface is now uneven. What to do?

  • I don't need to re-season my cast iron monthly because I don't use it for foods for which it is not appropriate (e.g. anything acidic) and I don't use soap on it.

  • When there's baked on crud, I use warm water and a brush with plastic bristles. I need to clean the edges of my pan though, they've got some caked on heavy black stuff on them.
