The holding tanks are like a big keg. They use c02 to push the beer, doing a forced carbonation.. But I could be wrong.

I know that yeast makes cO2 I have just never seen it done this way. Usually there is forced carbonation for kegs or priming sugar for bottles. You seemed to have neither.

It carbonates when the yeast eats the sugar and produces c02 which is carbination.
