  • When I say sweet I'm not talking about candy "sweet"... Its a natural sweetness like baby carrots. Nappa cabbage is naturally sweet too. When it ferments, the bacteria's converts sugars to lactic acid which makes kimchi less sweet. Most Resturants don't serve fresh kimchi unless the restaurant is always busy. Busy restaurants have a higher demand for kimchi so they have to constantly make new batches of kimchi.

  • Fresh Kimchi is sweet and spicy. As it ages it turns sour.

    Kimchi isn't even seen as a spicy food in Korea. Its just seen as a staple like rice.

  • How can you hate it? Not liking kimchi is like not liking cheese, wine or olives... you're missing out on an entire world of taste if you never develop the palate for it.
