Soba means buckwheat, you can find buckwheat grouts and flour in English healthfood stores- this guy is making dough for soba noodles (similar to spaghetti but with a delicious nutty taste). Soba doesn't have gluten, so making a dough requires more patience and technique than for wheatflour dough (which has the natural elasticity of gluten). It's possible to make soba flour more easily by adding 20% or more of wheatflour.

man this is a hard consistant work...... imagine if this is being served to customers at a restaurant and still hear them complaining about it, I would kick the customer's ass!!! and tell them shut up and fucking eat it!! Lol...
