The arm is too short on the autopilot/ i.e. mounted too close to the middle.
When bottoming out it will want to go further inwards, but can't. Hence the sound goes off. That Simrad is otherwise an eccellent autopilot, the best tiller pilot I've had.

Very enjoyable - but you ought to perservere with "Sinbad" and learn to use the autotack feature. I think RTFM is called for here. I sail a 22' boat around the east coast/thames estuary single handed and use my autohelm a great deal. The unit needs to learn the boat, but if it's unable to maitain a heading, in my experience it generally means your sail plan is not balanced or you need to reef!

Excellent powers of observation. Why on earth anyone would be frowning in such amazing boats is beyond me... maybe they are trying to look like they are doing really serious sailing? Who knows.
The only things that make me frown about sailing are no wind and having no boat.
I'll be fixing one of those two in the not too distant future - nothing I can do about the other though.
