This is another fantastic dish from our Executive Chef at Diet Chef. Alan has created this dish for those dieters that are looking to have a weekend off from their diet but still maintain a healthy and balanced meal.
It's a dish that can be prepared very quickly and is best served on the weekend with a small glass of wine sitting out on the terrace.

400 calories per serving

850g rope-grown mussels*
cleaned and washed
75ml dry white wine
Thai Sauce
1 stick of fresh lemongrass
1 large bird's eye chilli -- de-seeded
and finely sliced
2 cloves of garlic -- thinly sliced
10g fresh peeled ginger -- cut into fine strips
1 kaffir lime leaf
1 shallot (approx 20g) -- finely chopped
30g half fat crème fraiche
10g fresh coriander -- chopped
1 teaspoon mild curry powder
5g butter
juice of ½ lime

*Ensure that the mussels are closed prior to cooking, if they are open tap them and if they don't shut, discard.
