Hi Zak, I'm here to answer your question.

Most of the sculptures without arms are like that, because they fell off and couldn't be retrieved.

Some sculptures are created without arms to mimic the classics. For example the one at 01:03 reminds me of The Venus de Milo which is available in The Louvre Museum in Paris.
