  • here's the marinade: ½ cinnamon stick

    3 whole cloves

    ½ tsp grated nutmeg

    1 tsp fresh orange zest

    1 cup full bodied red wine -they suggest Amarone – very expensive, u can use Valpolicella

    1 tbsp sugar

  • tantalizing! I hardly eat red meat anymore, I stick to cold water fatty fish for my "meat" protein...but I really will have to try this!

    actually, right around here 3:06 they're both talking at the same time but Bittman says, "you don't need any grease."

  • I love Mark Bitterman. Can anyone spell the wine for me? After I make it, I'll post another comment -- my hubbie is a die hard steak fan, so we'll see if this will work
