I think this result is not only due to standing cutting board. Decisive reason might be Oliginarity on presentation. Morimoto's creation had width for taste.

Flay's ingredients and skill seem practically comparable to anyone working at a Chipotle. His Tex Mex "flair" has NOTHING on the sophistication and flavor profiles of traditional Japanese cuisine, let alone Morimoto's avant garde style. Go suck some black beans and corn, Bobby Flay.
