You pluck the ear hair because if you cut it it, it the ear gets extremely itchy and iritated.

Why would you want to pluck the hairs? I wouldn't want to hurt my dog like that.

be careful using the hemostats. some groomers shove them way down into the ear, grab all the hair they can and then start twisting the hemostats in a circle to yank all the hair at once. this is extremely painful for the dog. dont do this.

Another way that I clean the ears is to get cotton from hair supply stores(it's on a roll, in a box). It makes it easier to get the wax that is built up deep down in the ear. I just push it down until it stops. Then repeat until the cotton that I pull out is clean. This helps a lot for pets that have ear problems:)
