Thank you for the great tips. I have a convection oven with a digital thermometer. Do I insert the probe into the top of the meat as you did, or insert it into the side

@deview123 Good question! The most important thing to keep in mind is to insert the thermometer into the thickest part of the meat without touching bone or fat, so if you stick the thermometer into the meat from the side, you could still get an accurate measurement.
