A good easy day of smokin' on the UDS BBQ barrel smoker. My buddy Josh, the co-founder of this creation (well, really, I'm maybe more of the co-founder;*) has fired his up as many times as me, if not more. He's a machine!
I used the dome lid this time for some 2 level cooking action. This was the first time for that, third time cooking since the build, but things overall went as planned.. nice and steady, no surprises. We had about 25lbs of ribs cooked on 2 separate cooking cycles 2 racks each. During the whole time, we had going I'd say maybe 40lbs of pork "butts" (is what's on the package from the butcher). ALL THIS ON ABOUT 15lbs OF CHARCOAL/WOOD, MAYBE LESS. I tried to bring internals on everything up to 190+ and sit it there for a bit. I coated the ribs shortly before pulling them off, just long enough to get nice & sticky. YUMMmmmage!!
