I'm not sure what you mean. "Chosen by people to look right" is pretty much the same as "actually standardized" for most things. Or it's as close as it gets anyway. The main system used by English-speakers (Hepburn), although it has been edited over the years, has been explicitly written out and is even legally required in some circumstances.
Anyway, in no incarnation of it or any other Romanization is the "ju" (柔) part of "jujitsu" spelled "jiu."

Sure, but Romanization of Japanese writing is standardized, so there really is a right way to spell something.

If you'll read Renzo and Royler's book "Brazilian Jiu Jitsu", they mention in there that jiu is an incorrect spelling, but had already become so common before they had a chance to correct it that they simply continue to use it. Ju is a japanese prefix meaning soft. It, on its own, has nothing to do with BJJ specifically.
