Given the proximity of how close to the start of the outbreak this was, I'd be willing to bet "beginning" refers to the start of this accursed outbreak.
Few people were showing signs of it when she was saying it. A short time later... well... you've seen all the videos to this point, right?

So the only reason that Rosalia still looks like she was when she was alive is because the virus needed her to survive

@gran678 The flowers didn't preserve her body. the virus did in order to sustain itself. Albert and Rosalia both died two years ago because Albert killed Rosalia before he died.

@Dragon6578 Simple. The butterflies fed on the flowers that contained the Rosalia Virus. Somehow, the butterflies were also immune (maybe it doesn't work on their biology) and they ended up being a carrier. As the butterflies migrated, their scales were shed and likely were accidentally or unknowingly ingested by people who caught the Rosalia Virus.
