http://www.karenrothnutrition.com You might be saying, Cranberries in the summer? Well I was cleaning out my freezer when I came across my frozen cranberries that I stashed last Thanksgiving. So I thought Id choose this as my topic today. This berry and its juice can be enjoyed year round. And with good reason.

There have been numerous studies and research on the cranberry. Do you know that cranberries contain 5 times the antioxidants of broccoli? The phytonutrients found specifically in the cranberry can protect against macular degeneration and breast cancer. Yes isn't it amazing, that the phytonutrients can cause cancer cells to kill themselves off and shut down their ability to multiply. That comes from a study published in Cancer Letters. And of course cranberry and its juice can prevent urinary tract infections and also prevent kidney stone formation. Drinking the juice or eating the whole berry benefits the heart, because research has shown that the cranberry lowers LDL cholesterol while increasing the more beneficial HDL cholesterol.

Fresh cranberries are only in season in the winter, but you can freeze them for up to a year. Eating them raw is ideal, but they are tart. So you can slice them into small pieces and toss in salads, stir into a bowl of oatmeal or yogurt.

Dried cranberries retain most of their antioxidant punch and are available year around. So think about using those in homemade trail mixes, tossing in cereal, muffins and even in collard greens and especially in spinach salads. Both dry and fresh cranberries are delicious in chicken salad.

And cranberry juice is available year round. And this is truly a powerful juice. Look for the 100% pure cranberry juice to reap the most benefits. These will be tart, and you might want to sweeten them with some stevia. So Enjoy a glass of cranberry juice instead of orange juice with breakfast or mix with sparkling water for a refreshing spritzer.
So there's no excuse to have these only once a year at Thanksgiving.

  • do they need to be soaked beforehand? How long should they be left to ripen, fresh cranberries?

  • You can place cranberries in a bowl of water so the ones that are not ripe will float to the top and you can toss those. You only want to do this before you are ready to use. If you soak or rinse before storage, that will cause them to spoil quicker,

    Fresh cranberries will last up to 3 weeks in the refrigerator and a year in the freezer which is why I like to buy extra during holiday season and pull them out of the freezer in the summer.

  • I enjoy your videos. Very informative as I look up cancer-fighting foods. We are awaiting results from my mothers Leukemia test. Praying that she doesn't have it. But trying to find out as much as I can about cancer-fighting foods in the event she does have it. Everyone, please say a prayer for us.

  • In the descriptionbox you write "There have been numerous studies and research on the cranberry. ". Please add the references the next time you make a video.. Not just assert that there are studies supporting your argument.

  • Nice video and ive always thought cranberries were on of the most healthful fruits. But one thing about the commercial cranberry juices such as ocean spray is that they are always loaded with sweeteners, whether it be sugar or a chemical. Yes cranberries are very tart but one of the reasons they are so healthy is that they are naturally low in sugar, unlike most other fruits.

  • I've heard that cranberries aren't recommended for people taking certain medications. what is your opinion ?
