  • What are the reasons for not using a garlic crusher?

    I have used the bang on a flat knife and chop by hand method ever since I saw it on a cooking show a while ago because I like having the fibrous bits in as well, but are there other reasons?

    Seems like when you use a crusher a lot is wasted.

  • There is a lot of waste as you say, but there's more to it. All metal crushers impart an unpleasant flavor to the garlic, which can be significant, because there is a reaction between raw garlic and metal. Also a significant amount of juice is left behind in the crusher.

    In addition, garlic is made up of two elements, the pulp and the outer fibre. The mixture of the two gives the full garlic flavor. This fibre gets left behind when you use a crusher.

  • @thecoolcook Wouldn't the garlic react with the metal knife?

  • @bddc201 It would if there was prolonged contact with the juice of the garlic, such as you tend to get with a crusher. Using the method given, contact is very brief and much less 'spillage' of the juices
