The cat shitting in the box at 6:58 was super classy. I can smell it from here. Except for that 5 seconds, I loved this video.
I too wonder why egg yolks are used where whipping cream seems more common. Seems like a risk of an upset tummy.

You'll slightly notice the difference in the texture and taste, but either works well.
and refrigerating it too long will make the chocolate too hard to mold.

This is the first recipe I've seen that involves eggs. What is the difference between this one and the recipes with heavy cream?
Also, shouldn't one refrigerate the chocolate for 4 hours or overnight?

would you recommend using latex gloves to not melt the chocolate

not really... you need dexterity to form the truffles, it would be difficult to make nice shapes with gloves.
The key is to have the mixture cold enough so that it won't melt in you hands. When we shot the video, it was getting late and we had to work with a mixture that should have been in the fridge a little longer... :)
