Ginger beer plant isn't just yeast - it's a strange translucent substance many times bigger than yeast and it adds an iambic quality (somewhat sour) flavour to the ginger beer. Because it's not commercially available the only way to get it is to get some from a friend.
Ginger beer plant is known by several names such as water kefir and bees wine (because as you can see in the video the lumps rise and fall within the brew and sometimes hover like a bee)
